Recipes inspired by The Strawberry Festival – Maria McDonald

Strawberry season is here, and who doesn’t love strawberries, really? Here’s a quick, fun, kid-friendly recipe for you to savor!

Strawberry Pesto Bruschetta
Kids simply love strawberries for their ease of eating. Take your favorite cracker or sliced bread and smear it with a little cream cheese, or any soft cheese really. Add a dollop of basil pesto, then top with a beautiful halved strawberry. Simple, delicious, and fuel for a full day of outdoor fun.

1 baguette, sliced OR crackers
Homemade Pesto OR just a fresh basil leaf instead
Cream cheese OR any soft cheese (goat, brie, havarti)

Homemade Pesto Recipe
½ cup of olive oil (or ⅔ cup depending on the type of consistency you like)
2 cups fresh packed basil
¼ cup pecans, walnuts or pine nuts
1 clove garlic
1 tsp. lemon zest or juice
½ tsp. salt
¼ tsp. pepper
⅓ cup of shredded parmesan cheese
Blend together in a food processor or blender until smooth or a little chunky depending on how you like it. Make sure to add ingredients in the order they are listed to help with the blending, having the liquid at the bottom helps.
